Dairy Free Pinwheels: For Weaning Babies or Snacking Kids.

As a parent, it can be a challenge to find healthy and delicious snacks that your little ones will love. This is especially true if your child has dietary restrictions such as a gluten or dairy intolerance. But fear not, we have the perfect solution for you! Gluten-free, dairy-free pinwheels are the perfect snack for babies and toddlers with cow's milk allergy. They're easy to make, packed with nutrients, and most importantly, your little one will love them!

Ingredients: -

To make the pastry:

125g plain flour 

120mls of dairy free milk 

60g coconut oil or dairy free margarine

1 tsp baking powder 

1 egg

Or buy ready rolled puff pastry

2 tbsp tomato paste

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp black pepper

Handful of  baby spinach leaves

115g vegan cream cheese

50g chopped sun-dried tomatoes

50g chopped olives

Instructions:

1. Preheat the oven to 180oC

2. In a large mixing bowl, combine the gluten-free flour, and baking powder.

3. In a separate bowl, whisk together the milk, margarine, and egg until well combined.

4. Slowly pour the wet ingredients into the dry ingredients and stir until a dough forms.

5. Place the dough between two sheets of parchment paper and roll out into a rectangle shape.

6. In a small bowl, mix together the tomato paste, nutritional yeast, garlic powder, onion powder, and black pepper.

7. Spread the tomato paste mixture over the dough, leaving a small border around the edges.

8. Layer the baby spinach leaves on top of the tomato paste mixture.

9. Spread the vegan cream cheese over the spinach leaves. 10. Sprinkle the sun-dried tomatoes and olives on top of the cream cheese.

11. Starting with the long side of the rectangle, tightly roll the dough into a log shape.

12. Use a sharp knife to cut the log into 1-inch slices.

13. Place the pinwheels on a baking sheet lined with parchment paper.

14. Bake for 15-18 minutes, until the pinwheels are lightly golden brown.

15. Allow the pinwheels to cool slightly before serving. Gluten-free, dairy-free pinwheels are a great snack for babies and toddlers.
