If you are looking for a delicious and healthy vegetarian dish, then you will definitely want to try this recipe for Sweet Potato and Chickpea Cakes. This delicious and nutritious dish is filled with flavour and texture, making it the perfect dish to serve as an appetizer or even as a main course. Not only is it easy to make, but it is also full of protein and fibre, making it a great way to get your daily dose of nutrients.

 

Gather up the following ingredients:

-2 large sweet potatoes, peeled and diced

-1 can of chickpeas, drained and rinsed

-120g of flour

-2 tablespoons of olive oil

- 1 onion dices

- 1 bell pepper diced 

-1 teaspoon of garlic powder

-1 teaspoon of cumin

-1 teaspoon of smoked paprika

-1/4 teaspoon of black pepper

-1/4 cup of chopped fresh parsley

 - 1/2 teaspoon of chilli flakes - optional.

Salt and pepper to season (leave out salt if making for a baby under 1 year)

 

Method

  1. The first step to making this delicious dish is to preheat your oven to 375 degrees Fahrenheit. Next, in a large bowl, mash the sweet potatoes until they are mostly smooth. Then, add the drained and rinsed chickpeas, flour, olive oil, onion, red bell pepper, garlic powder, cumin, smoked paprika, black pepper and parsley to the mashed sweet potatoes and mix until everything is evenly combined.
  2. Once all of the ingredients have been mixed together, form the mixture into small round patties and place and fry them in the olive oil on each side until golden brown.  Remove and let cool.

 

The sweet potato and chickpea cakes are now ready to be served. Serve them warm with a side of yours and your child's favourite dipping sauce or condiment. You can also top them with diced avocado, tomato, or any other topping of your choice. Enjoy!
