Delightful Potato Rosti: A Nutritious Recipe for Fussy Eaters

Our delightful potato rosti might just be the answer. This Swiss-inspired dish is not only simple to prepare but also packed with flavour, making it a hit among all age groups. Perfect as a breakfast item, side dish, or a base for a variety of toppings, this potato rosti recipe is sure to become a staple in your cooking repertoire.
Ingredients
- 500g potatoes, peeled and grated
- 1 small onion, finely chopped (optional)
- Salt and pepper to taste
- 2 tablespoons olive oil or rapeseed oil for frying
Instructions
1. Prepare the Potatoes: After peeling and grating the potatoes, place them in a clean tea towel and squeeze out as much excess moisture as possible. This step is crucial for achieving a crispy rosti.
2. Mix: Transfer the grated potatoes to a bowl, add the finely chopped onion (if using), and season with salt and pepper. Mix well to ensure the seasoning is evenly distributed.
3. Shape and Fry: Heat the oil in a non-stick frying pan over medium heat. Take a portion of the potato mixture and flatten it into a pancake shape in the pan. Fry for 3-4 minutes on each side or until golden brown and crispy.
4. Serve: Serve your potato rosti hot from the pan, either as is or with your choice of toppings such as sour cream, smoked salmon, or a poached egg.
